This Melon Soup with Glass Noodles is just proof of this. I use Del Monte -Lime,Mint and Aloe Coconut Water add some fresh lime juice and some shredded ginger. Three kind of melons for color and Cellophane Noodles (made from mung beans NOT rice). Soup is perfect for hot summer weather.
